FLAXSEED GUNPOWDER/PODI

Gunpowder or Podi as it is referred to as is a native to South India. It is a condiment that can be had with idli, dosa, steaming hot rice (obviously with ghee) or roti. It’s multipurpose use finds it a place in most of the South Indian households. This version of the podi is mine & dear mothers recipe which we developed as we found it difficult to have flaxseeds on its own. It is a pretty easy recipe that has all the goodness from all the lentils & the flaxseeds. My version is a slightly spicy one but what is a gunpowder masala if it isn’t spicy. You are surely going to love how it tastes, so here goes:

INGREDIENTS:

  1. Flaxseed 1 cup
  2. Urad dal 3/4 cup
  3. Channa dal 1/2 cup
  4. Dry chilli 20-30 (check for spice levels)
  5. Tamarind 1 medium sized ball
  6. Curry leaves 1 handful
  7. Salt to taste
  8. Sesame oil 5 tsp (you can use any oil of choice)

METHOD:

  • Take a heavy bottom kadai/pan & on low flame roast flaxseed until it starts to splutter. Remove on a plate & keep aside to cool.
  • In the same kadai/pan roast urad dal until it smells nutty & turns slightly brown. Remove urad dal on a different plate & cool.
  • Now repeat the process with channa dal like the flaxseed & urad dal. Cool on a plate.
  • To the kadai/pan add the oil & on low flame fry the chillies, curry leaves & tamarind add salt according to taste preference. Continue to fry on low flame until curry leaves crumble easily when pressed. Remove on a plate & cool.
  • Make sure to cool all the ingredients individually for at least an hour & a half.
  • Grind all the ingredients individually (i.e. urad dal separately, flaxseed separately, channa dal separately & the fried items separately).
  • Make sure to not over grind the flaxseeds it will release oil if you do so.
  • Finally mix all the powders together
  • Voila your gunpowder/podi is all ready to eat.

Eat it with idlis, dosa, rice with ghee or roti. When you have it with dosa, idli or roti you can add sesame oil or any oil of choice. Not just is this podi an amazing condiment but also protein & omega 3 rich. If you want just a plain podi, exclude the flaxseeds from the recipe and follow all the steps exactly the same……
